Ingredients
  

For the salad
  • 1 pound large, peeled, and deveined shrimp
  • 1 ripe mango, diced into bite-sized pieces
  • 4 cups mixed greens (spinach, arugula, or your choice)
  • ¼ cup chopped fresh cilantro
  • 1 medium cucumber, diced
  • ¼ cup thinly sliced red onion (optional)
For the vinaigrette
  • 2 tablespoons olive oil for grilling shrimp
  • 2 tablespoons freshly squeezed lime juice
  • 1 teaspoon honey (or to taste)

Method
 

Preparation
  1. In a bowl, mix shrimp with olive oil, salt, and pepper. Allow them to marinate while you prep other ingredients (about 10 minutes).
Grilling
  1. Preheat your grill or grill pan over medium heat. Grill the shrimp for about 2-3 minutes per side until they turn pink and opaque. Remove from heat and set aside.
Making the Vinaigrette
  1. In a small bowl, whisk together lime juice, honey, and some chopped cilantro for the vinaigrette.
Assembling the Salad
  1. In a large bowl, combine mixed greens, diced mango, cucumber, red onion, and grilled shrimp.
  2. Drizzle the Cilantro-Lime Vinaigrette over the salad, and toss gently to mix all the ingredients without crushing the shrimp or mango.
Serving
  1. Plate your salad and enjoy fresh! You can garnish it with additional cilantro if desired.

Notes

Choose fresh ingredients for the best taste. Customize your salad by adding other veggies or swapping mango for avocado. If time permits, marinate the shrimp ahead of time for enhanced flavor. Store leftovers in an airtight container for about a day; separate the dressing to maintain crispness.
