Preparation of Ingredients
- If you’re using wooden skewers, soak them in water for about 30 minutes to prevent burning on the grill. Cut the chicken into bite-sized pieces and the pineapple into chunks.
Marinate the Chicken
- In a medium bowl, combine the chicken pieces with about ¾ cup of BBQ sauce, making sure to coat the chicken evenly. Let it marinate for at least 15 minutes while you prepare your grill.
Assemble the Skewers
- Take your skewers and alternate threading the marinated chicken and pineapple pieces. A good pattern is chicken, pineapple, chicken, pineapple to ensure a perfect balance in every bite.
Grill on Medium Heat
- Preheat your grill to medium-high heat. Lightly oil the grill grates. Place the skewers on the grill and cook for about 10-12 minutes, turning every few minutes until the chicken is cooked through (internal temperature should reach 165°F) and has lovely grill marks.
Brush with BBQ Sauce
- In the final minutes of grilling, brush the skewers with the remaining BBQ sauce for a delicious glaze.
Serve and Enjoy
- Once done, remove from the grill, let them cool slightly, and enjoy your skewers hot off the grill!
Notes
Serve with refreshing side salad or coleslaw, rice, or warm tortillas. Pair with chilled lemonade or iced tea. For variation, substitute chicken with shrimp or firm tofu.
