Preparation
- In a small bowl, whisk together the olive oil, lime juice, minced garlic, ground cumin, smoked paprika, salt, and pepper to create the marinade.
- Place the chicken breasts in a large zip-top bag or a shallow dish. Pour the marinade over the chicken, ensuring all pieces are well coated. Seal the bag or cover the dish and let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for maximum flavor.
- Preheat your grill to medium-high heat.
Cooking
- Place the marinated chicken breasts onto the grill. Cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
- During the last few minutes of grilling, add the avocado slices on the grill for about 1-2 minutes on each side.
Serving
- Remove the chicken from the grill and let it rest for a few minutes. Plate the chicken, top it with the grilled avocado slices, and garnish with fresh cilantro.
Notes
For a spicy kick, add a pinch of cayenne pepper or fresh herbs. Letting the chicken rest after grilling allows the juices to redistribute.
