Easy Creamy Tomato Pasta

Ingredients
  

Main Ingredients
  • 8 oz Pasta (penne, fettuccine, or your favorite type) Use any pasta of your choice.
  • 2 tablespoons Olive oil
  • 1 small Onion, diced
  • 3 cloves Garlic, minced
  • 14 oz Canned tomatoes (crushed or diced)
  • 1 cup Heavy cream (or a non-dairy alternative) Use a lighter option if desired.
  • 1/4 cup Fresh basil, chopped
  • 1/2 cup Parmesan cheese, grated Use Halal brand if preferred.
  • to taste Salt and pepper

Method
 

Cooking the Pasta
  1. Bring a pot of salted water to a boil. Add your pasta and cook according to package instructions until al dente (usually about 8-10 minutes). Reserve a cup of pasta water and then drain the rest.
Sautéing Aromatics
  1. While your pasta cooks, heat olive oil in a large skillet over medium heat. Add the diced onions and sauté until translucent, about 3-4 minutes. Then, add minced garlic and sauté for an additional minute until fragrant.
Making the Sauce
  1. Stir in the canned tomatoes and let them simmer for about 5 minutes. Season with salt and pepper to taste.
  2. Pour in the heavy cream, stirring until combined. Allow it to cook on low heat for another 3-4 minutes until it thickens slightly.
Combining
  1. Add the cooked pasta to the skillet and toss it in the creamy tomato sauce. If the sauce is too thick, add some reserved pasta water to achieve your desired consistency.
Finishing and Serving
  1. Remove from heat and stir in the fresh basil and Parmesan cheese. Taste and adjust the seasoning if needed. Serve hot with extra cheese and basil on top, if desired!

Notes

For a lighter dish, swap heavy cream for half-and-half or coconut cream. You can also use nutritional yeast for a vegan alternative. Ensure pasta is cooked al dente and avoid boiling after adding cream to prevent separation.
