  1. Begin by rinsing the rice under cool water for about 2 minutes. This helps remove excess starch and ensures fluffy grains.
  2. In a medium-sized pot, bring 2 cups of water to a boil. Add the rinsed rice and a pinch of salt. Stir once, then cover the pot.
  3. Reduce the heat to low and let it simmer for about 15 minutes, or until the rice is tender and all the water is absorbed.
  4. Once cooked, remove the pot from the heat and let it sit, covered, for another 5 minutes. This allows the rice to finish cooking.
  5. Fluff the rice with a fork.
  6. Stir in the fresh lime juice and olive oil (if using). Carefully fold in the chopped cilantro, ensuring an even distribution.
  7. Taste the rice and add more salt or lime juice if needed according to your preference.
