Marinade Ingredients
  • 1/2 cup olive oil Extra virgin for best flavor.
  • 1/4 cup lemon juice Freshly squeezed.
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • to taste Salt
  • to taste Pepper
Chicken
  • 1-2 pounds of chicken (breasts, thighs, or your favorite cut)

Method
 

Preparation
  1. In a mixing bowl, combine the olive oil, lemon juice, garlic powder, onion powder, oregano, paprika, salt, and pepper. Whisk them together until well blended.
  2. Place the chicken in a large resealable plastic bag or shallow glass dish. Pour the marinade over the chicken, ensuring every piece is coated.
  3. Seal the bag or cover the dish, then refrigerate for at least 30 minutes. For more flavor, marinate for 2-4 hours (or even overnight).
Grilling
  1. Preheat your grill over medium-high heat.
  2. Remove the chicken from the marinade and discard the excess marinade.
  3. Grill the chicken for about 6-7 minutes per side, or until it reaches an internal temperature of 165°F (75°C).
  4. Remove the chicken from the grill, let it rest for a few minutes, slice it up, and serve it with your favorite sides.

Notes

Experiment with different herbs and spices. This marinade also works well with fish or shrimp. Do not marinate for more than 24 hours to avoid a mushy texture. Leftovers can be stored in an airtight container in the refrigerator for up to three days.
