Easy & Cheesy Meatball Subs

Ingredients
  

For the Meatballs
  • 1 pound ground beef or chicken (Halal)
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 piece egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
For the Subs
  • 4 pieces soft sub rolls
For the Sauce
  • 2 cups marinara sauce (store-bought or homemade)
For the Cheese
  • 1 cup shredded mozzarella cheese
Additional Ingredients
  • Olive oil for drizzling

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine the ground beef or chicken, breadcrumbs, grated Parmesan cheese, egg, minced garlic, Italian seasoning, and salt and pepper. Mix until just combined.
  3. Roll the mixture into small balls, roughly the size of a golf ball, and place them on a baking sheet lined with parchment paper.
Cooking
  1. Bake the meatballs in the preheated oven for about 20 minutes, or until they reach an internal temperature of 165°F (74°C) and are browned.
  2. Meanwhile, heat the marinara sauce in a medium saucepan over medium heat until warm and bubbly.
  3. Slice the sub rolls in half lengthwise. Place 2-3 meatballs in each roll, generously ladle marinara sauce over them, and top with mozzarella cheese.
  4. Return the assembled subs to the oven for an additional 5-7 minutes, or until the cheese melts and bubbles.
Serving
  1. Drizzle a little olive oil on top and serve immediately.

Notes

For a healthier twist, use ground turkey instead of beef or chicken. Toast the sub rolls before assembling to prevent sogginess. Store leftovers separately for up to 3 days.
