Preparation
- Preheat the oven to 375°F (190°C).
- In a large mixing bowl, combine the ground beef or chicken, breadcrumbs, grated Parmesan cheese, egg, minced garlic, Italian seasoning, and salt and pepper. Mix until just combined.
- Roll the mixture into small balls, roughly the size of a golf ball, and place them on a baking sheet lined with parchment paper.
Cooking
- Bake the meatballs in the preheated oven for about 20 minutes, or until they reach an internal temperature of 165°F (74°C) and are browned.
- Meanwhile, heat the marinara sauce in a medium saucepan over medium heat until warm and bubbly.
- Slice the sub rolls in half lengthwise. Place 2-3 meatballs in each roll, generously ladle marinara sauce over them, and top with mozzarella cheese.
- Return the assembled subs to the oven for an additional 5-7 minutes, or until the cheese melts and bubbles.
Serving
- Drizzle a little olive oil on top and serve immediately.
Notes
For a healthier twist, use ground turkey instead of beef or chicken. Toast the sub rolls before assembling to prevent sogginess. Store leftovers separately for up to 3 days.
