  • 1 large ball burrata cheese
  • 4-6 slices crusty Italian or French bread Bread should be thick enough to hold the toppings.
  • 2 cups ripe cherry or heirloom tomatoes, diced
  • ½ cup fresh basil leaves, torn
  • 2 tablespoons extra virgin olive oil Use high-quality oil for best flavor.
  • Salt and freshly cracked black pepper, to taste
  • Balsamic reduction (optional, for drizzling) Can enhance the flavor.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Arrange the slices of bread on a baking sheet and drizzle with a little olive oil.
  3. Toast in the oven for about 5-7 minutes, or until golden and crispy.
Mixing
  1. While the bread is toasting, combine diced tomatoes, torn basil, olive oil, salt, and pepper in a bowl.
  2. Gently toss to combine.
Assembly
  1. Once the bread is ready, remove it from the oven.
  2. Place a generous amount of the tomato mixture on each slice of bread and then top with a generous scoop of burrata.
Serving
  1. Finish off with an extra drizzle of olive oil and balsamic reduction if using.
  2. Serve immediately while the bread is still warm.

Notes

For a refreshing pair, serve with arugula salad and a glass of chilled white wine. Consider different types of tomatoes for added flavor. Avoid over-toasting bread; it should be crunchy outside and slightly chewy inside.
