  • 2 lbs chicken thighs, boneless & skinless, cut into bite-sized pieces Thighs are recommended for juiciness, can substitute with chicken breasts.
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 1 tablespoon ginger, fresh, minced
  • 2 cloves garlic, minced
  • 1/2 tablespoon sesame oil
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • to taste chopped green onions For garnish
  • to taste sesame seeds For garnish

Method
 

Preparation
  1. In a large skillet, heat sesame oil over medium-high heat.
  2. Add chicken pieces and cook until browned, about 5-7 minutes.
  3. In a separate bowl, whisk together soy sauce, brown sugar, minced ginger, and garlic.
  4. Pour the sauce mixture over the cooked chicken.
  5. Reduce the heat to medium-low and allow the chicken to simmer in the sauce for about 10 minutes, stirring occasionally.
  6. In another bowl, mix cornstarch with water, then pour it into the skillet.
  7. Stir constantly until the sauce thickens, which should take around 1-2 minutes.
  8. Once the sauce has thickened, remove from heat and garnish with chopped green onions and sesame seeds.

Notes

Leftovers can be stored in an airtight container in the refrigerator for 3-4 days. For longer storage, freeze for 2-3 months. Reheat on the stovetop over low heat or in the microwave until warmed through.
