Activate the yeast
In a small bowl, dissolve the yeast and 1 tablespoon of sugar in the warm water. Let it sit for 5-10 minutes until it becomes frothy.
Mix the wet ingredients
In a large mixing bowl, combine the melted butter, warm milk, remaining sugar, and salt. Add the yeast mixture and stir to combine.
Add the flour
Gradually add 4 1/2 cups of flour, mixing until a soft dough forms. If using a stand mixer, knead on medium speed for 5-7 minutes. If kneading by hand, turn the dough onto a floured surface and knead for about 8-10 minutes. Add more flour if the dough is sticky.
Let the dough rise
Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1 hour, or until it doubles in size.
Shape the rolls
Punch down the dough and divide it into 12-15 equal pieces. Shape each piece into a ball and place them on a parchment-lined or greased baking sheet, spacing them slightly apart.
Second rise
Cover the rolls with the kitchen towel and let them rise again for 30-40 minutes, or until puffy.
Bake the rolls
Preheat your oven to 375°F (190°C). Bake the rolls for 15-18 minutes, or until golden brown.
Brush with butter
Remove the rolls from the oven and immediately brush them with melted butter for a glossy finish.
