  • 2 to 3 pounds beef roast, your choice of cut, preferably ribeye or sirloin Choose a tender cut for best results.
  • 2 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • to taste fresh herbs (like rosemary or thyme) For additional flavor, if desired.

Preparation
  1. Start by taking your beef roast out of the refrigerator and allowing it to come to room temperature (about 30 minutes). This ensures even cooking.
  2. In a small bowl, mix olive oil, garlic powder, onion powder, salt, and black pepper. Rub this mixture all over the beef roast, ensuring it’s well coated. If you’re using fresh herbs, sprinkle those on as well.
Cooking
  1. Preheat the air fryer to 400°F (about 200°C) for 5 minutes.
  2. Place the seasoned roast into the air fryer basket. Cook for approximately 25-30 minutes, flipping halfway through. Use a meat thermometer to check for doneness; aim for around 135°F (57°C) for medium-rare or 145°F (63°C) for medium.
  3. Once cooked to your liking, carefully remove the roast from the air fryer and let it rest for at least 10 minutes. This step is crucial as it helps the juices redistribute throughout the meat.
  4. After resting, slice your roast beef and serve with your favorite sides. Enjoy!

Notes

For leftovers, store in an airtight container in the refrigerator and consume within 3-4 days. To reheat, slice the meat and warm it up in the air fryer for about 5 minutes.
