Preparation
- If using block tofu, ensure it's well-drained and pat it dry. Crumble it into small pieces and set aside.
- In a large bowl, combine sweet corn, crumbled tofu, flour, green onions, garlic powder, cumin, salt, and pepper. Mix well until everything is evenly combined.
- For better results, let the mixture chill in the refrigerator for about 10-15 minutes.
- Preheat your air fryer to 375°F (190°C) for about 5 minutes.
- Take a spoonful of the mixture and form it into a small patty. Repeat with the remaining mixture.
Cooking
- Spray the air fryer basket lightly with olive oil. Arrange the fritters in a single layer and lightly spray the tops with olive oil.
- Cook for about 10-12 minutes, flipping halfway through, until they are golden and crispy.
Serving
- Remove the fritters from the air fryer, let them cool for a minute, and serve with your favorite dipping sauce or toppings.
Notes
For extra crunch, add finely chopped bell peppers or cornmeal to the mixture. If the mixture feels too wet, add a bit more flour until it holds together. Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in the air fryer to retain crispiness.
