Ingredients

  • 1 cup sweet corn (fresh or canned)
  • 1 cup firm tofu, crumbled Ensure it's well-drained
  • 1/4 cup all-purpose flour (or gluten-free flour)
  • 2 green onions, chopped
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon cumin powder
  • Salt and pepper to taste
  • Olive oil spray For air frying

Method
 

Preparation
  1. If using block tofu, ensure it's well-drained and pat it dry. Crumble it into small pieces and set aside.
  2. In a large bowl, combine sweet corn, crumbled tofu, flour, green onions, garlic powder, cumin, salt, and pepper. Mix well until everything is evenly combined.
  3. For better results, let the mixture chill in the refrigerator for about 10-15 minutes.
  4. Preheat your air fryer to 375°F (190°C) for about 5 minutes.
  5. Take a spoonful of the mixture and form it into a small patty. Repeat with the remaining mixture.
Cooking
  1. Spray the air fryer basket lightly with olive oil. Arrange the fritters in a single layer and lightly spray the tops with olive oil.
  2. Cook for about 10-12 minutes, flipping halfway through, until they are golden and crispy.
Serving
  1. Remove the fritters from the air fryer, let them cool for a minute, and serve with your favorite dipping sauce or toppings.

Notes

For extra crunch, add finely chopped bell peppers or cornmeal to the mixture. If the mixture feels too wet, add a bit more flour until it holds together. Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in the air fryer to retain crispiness.
