Ingredients
  

Crust
  • 1.5 cups graham cracker crumbs
  • 0.5 cups unsalted butter, melted
  • 0.25 cups granulated sugar
Filling
  • 16 ounces cream cheese, softened
  • 1 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1.5 cups heavy whipped cream
Toppings
  • 1 cup mix of fresh berries (strawberries, blueberries, raspberries)
  • to taste caramel or chocolate sauce for drizzling optional

Method
 

Preparation of the Crust
  1. Combine the graham cracker crumbs, melted butter, and granulated sugar in a mixing bowl. Stir until the mixture is evenly moistened.
  2. Press this mixture firmly into the base of a 9-inch springform pan to create a crust. Use the back of a measuring cup to pack it down tightly.
Making the Filling
  1. In a large mixing bowl, beat the softened cream cheese until smooth.
  2. Slowly add the powdered sugar and vanilla extract while continually mixing.
  3. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until well combined.
Assembling the Cheesecake
  1. Pour the creamy filling over the prepared crust, smoothing the top with a spatula.
  2. Cover the pan with plastic wrap and refrigerate for at least 4 hours, ideally overnight.
Adding Toppings
  1. Once set, carefully remove the sides of the springform pan.
  2. Decorate the top with fresh berries and drizzle with caramel or chocolate sauce if desired.
  3. Slice, serve, and enjoy!

Notes

For substitutions, low-fat cream cheese or vegan options made from cashews can be used. Ensure cream cheese is at room temperature to avoid lumps.
