Preparation
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large mixing bowl, cream the softened butter and sugar together until light and fluffy. This should take about 3-4 minutes. Add the egg and vanilla extract, and mix until well combined.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing just until combined. Be careful not to over-mix, as this can lead to tough cookies!
- Cover the dough with plastic wrap and chill in the refrigerator for at least 1 hour. This helps the cookies keep their shape during baking.
Shaping and Baking
- Once chilled, sprinkle flour on your work surface and roll out the dough to about ¼ inch thick.
- Use fun cookie cutters to create shapes, and place them on the prepared baking sheets.
- Bake for 8-10 minutes or until the edges are lightly golden. Allow them to cool completely on wire racks before decorating.
