Preparation
  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large mixing bowl, cream the softened butter and sugar together until light and fluffy. This should take about 3-4 minutes. Add the egg and vanilla extract, and mix until well combined.
  3. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet mixture, mixing just until combined. Be careful not to over-mix, as this can lead to tough cookies!
  5. Cover the dough with plastic wrap and chill in the refrigerator for at least 1 hour. This helps the cookies keep their shape during baking.
Shaping and Baking
  1. Once chilled, sprinkle flour on your work surface and roll out the dough to about ¼ inch thick.
  2. Use fun cookie cutters to create shapes, and place them on the prepared baking sheets.
  3. Bake for 8-10 minutes or until the edges are lightly golden. Allow them to cool completely on wire racks before decorating.
Decoration
  1. Once cooled, get creative with icing and toppings—this is where the fun begins!
