Preparation
- In a large mixing bowl, cream together the room-temperature butter and granulated sugar until light and fluffy, about 2-3 minutes.
- Beat in the egg and vanilla extract until well incorporated.
- In a separate mixing bowl, whisk together the flour, baking powder, and salt. Gradually add this mixture to the wet ingredients, mixing until just combined.
- Divide the dough into two disks, wrap in plastic wrap, and refrigerate for at least 1 hour or until firm.
- Preheat your oven to 350°F (175°C) while waiting for the dough to chill.
Baking
- Once chilled, place the dough onto a floured surface. Roll it out to about ¼ inch thick. Use your favorite cookie cutters to create shapes and place them onto lined baking sheets.
- Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
- Allow the cookies to cool completely on the baking sheet before transferring them to a wire rack.
- Get creative with icing, sprinkles, or any toppings you love!
Notes
Consider adding a tablespoon of lemon or almond extract instead of vanilla for a hint of flavor. Keep an eye on the cookies while baking; they can go from golden to overbaked quickly. If the dough seems too sticky, add a little extra flour carefully.
