Preparation
  1. In a large mixing bowl, cream together the room-temperature butter and granulated sugar until light and fluffy, about 2-3 minutes.
  2. Beat in the egg and vanilla extract until well incorporated.
  3. In a separate mixing bowl, whisk together the flour, baking powder, and salt. Gradually add this mixture to the wet ingredients, mixing until just combined.
  4. Divide the dough into two disks, wrap in plastic wrap, and refrigerate for at least 1 hour or until firm.
  5. Preheat your oven to 350°F (175°C) while waiting for the dough to chill.
Baking
  1. Once chilled, place the dough onto a floured surface. Roll it out to about ¼ inch thick. Use your favorite cookie cutters to create shapes and place them onto lined baking sheets.
  2. Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
  3. Allow the cookies to cool completely on the baking sheet before transferring them to a wire rack.
  4. Get creative with icing, sprinkles, or any toppings you love!

Notes

Consider adding a tablespoon of lemon or almond extract instead of vanilla for a hint of flavor. Keep an eye on the cookies while baking; they can go from golden to overbaked quickly. If the dough seems too sticky, add a little extra flour carefully.
