Preparation
- Preheat your oven to 350°F (175°C) and line a cupcake tray with cupcake liners.
- In a bowl, whisk together the all-purpose flour, baking powder, and salt. Set it aside.
- In a mixing bowl, beat the softened butter and granulated sugar until it becomes light and fluffy (about 3-5 minutes).
- Add the eggs, one at a time, mixing until well-combined. Then, pour in the milk and vanilla extract and stir until smooth.
- Gradually add the dry mixture to the wet mixture, mixing gently until just combined. Be careful not to overmix.
- Spoon the batter into the cupcake liners, filling each about ⅔ full.
Baking
- Place the tray in the preheated oven and bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
- Once baked, remove from the oven and let the cupcakes cool in the tray for 5 minutes before transferring them to a wire rack to cool completely.
Frosting and Decorating
- In a bowl, mix the powdered sugar, softened butter, and milk to create a fluffy frosting.
- Divide the frosting into different bowls and add food coloring for bright, pastel hues.
- Decorate your cooled cupcakes with frosting and add sprinkles and other festive touches to create your Easter bunnies!
Notes
To keep cupcakes fresh, store in an airtight container at room temperature for up to 3 days. Refrigerate for up to a week or freeze for up to 3 months. Reheat in the microwave for 10-15 seconds.
