  • 2 cups all-purpose flour, sifted

  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon salt
Wet Ingredients
  • ¾ cup unsalted butter, softened You can use margarine for a dairy-free option.
  • 1 large egg, lightly beaten
  • 1 teaspoon vanilla extract
Add-ins
  • ½ cup mixed dried fruits (such as raisins, sultanas, or apricots)
  • 1 tablespoon zest of lemon For a refreshing kick.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the sifted flour, sugar, baking powder, spices, and salt. Use a whisk to mix.
  3. In another bowl, beat the softened butter until creamy. Add the lightly beaten egg and vanilla extract, and mix until combined.
  4. Slowly add the wet mixture to the dry ingredients, stirring continuously to avoid lumps.
  5. Gently fold in the mixed dried fruits and lemon zest into the dough.
  6. Dust a clean surface with flour and roll out your dough to about ½ inch thickness. Use a cookie cutter to cut out shapes.
  7. Place the biscuits on a baking sheet lined with parchment paper.
Baking
  1. Bake the biscuits in the preheated oven for about 15-20 minutes or until the edges turn golden brown.
  2. Let the biscuits cool on a wire rack before serving.

Notes

Easter Biscuits can be stored in an airtight container at room temperature for up to a week. For longer storage, freeze them wrapped well for up to three months. Reheat at 300°F (150°C) for 5-10 minutes.
