Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the sifted flour, sugar, baking powder, spices, and salt. Use a whisk to mix.
- In another bowl, beat the softened butter until creamy. Add the lightly beaten egg and vanilla extract, and mix until combined.
- Slowly add the wet mixture to the dry ingredients, stirring continuously to avoid lumps.
- Gently fold in the mixed dried fruits and lemon zest into the dough.
- Dust a clean surface with flour and roll out your dough to about ½ inch thickness. Use a cookie cutter to cut out shapes.
- Place the biscuits on a baking sheet lined with parchment paper.
Baking
- Bake the biscuits in the preheated oven for about 15-20 minutes or until the edges turn golden brown.
- Let the biscuits cool on a wire rack before serving.
Notes
Easter Biscuits can be stored in an airtight container at room temperature for up to a week. For longer storage, freeze them wrapped well for up to three months. Reheat at 300°F (150°C) for 5-10 minutes.
