  • 2 large eggs
  • 3/4 cup milk
  • 1 teaspoon vanilla extract
  • Zest of one lemon for a fresh, citrusy kick

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare a baking dish with parchment paper or a light coat of oil.
  2. In a mixing bowl, combine the flour, sugar, baking powder, and salt. Whisk until combined.
  3. In a separate bowl, beat the eggs, then add milk, vanilla extract, and lemon zest. Mix well until smooth.
  4. Make a well in the center of the dry ingredients and pour in the wet mixture. Gently stir until just combined.
  5. If using, fold in ground cinnamon.
Baking
  1. Pour the batter into the prepared baking dish and spread evenly.
  2. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and a toothpick inserted comes out clean.
Cooling and Topping
  1. Let it cool slightly in the pan before transferring to a wire rack.
  2. Once completely cooled, add cream cheese frosting or drizzle with honey.
