Preparation
- Preheat your oven to 350°F (175°C) and prepare a baking dish with parchment paper or a light coat of oil.
- In a mixing bowl, combine the flour, sugar, baking powder, and salt. Whisk until combined.
- In a separate bowl, beat the eggs, then add milk, vanilla extract, and lemon zest. Mix well until smooth.
- Make a well in the center of the dry ingredients and pour in the wet mixture. Gently stir until just combined.
- If using, fold in ground cinnamon.
Baking
- Pour the batter into the prepared baking dish and spread evenly.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and a toothpick inserted comes out clean.
Cooling and Topping
- Let it cool slightly in the pan before transferring to a wire rack.
- Once completely cooled, add cream cheese frosting or drizzle with honey.
Notes
Store leftovers in an airtight container in the refrigerator for 3-4 days or freeze for up to a month. Reheat slices before serving.
