Fruits and Mix-ins
  • 1 cup mini marshmallows
  • 1 cup shredded coconut sweetened or unsweetened
  • 1 cup canned mandarin oranges drained
  • 1 cup canned pineapple chunks drained
  • ½ cup maraschino cherries drained and halved
Dressing
  • 1 cup heavy whipping cream
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract

Preparation
  1. Drain the mandarin oranges and pineapple chunks to prevent excess moisture.
  2. In a mixing bowl, add the heavy whipping cream and powdered sugar. Using a hand mixer or whisk, whip until soft peaks form.
  3. In a large mixing bowl, gently fold in the mini marshmallows, shredded coconut, mandarin oranges, and pineapple chunks into the whipped cream.
  4. Fold in the maraschino cherries for a pop of color and sweetness.
  5. Add a splash of vanilla extract to the mixture and lightly combine to infuse flavor.
  6. Transfer the ambrosia salad to a serving dish, cover it, and refrigerate for at least an hour to allow the flavors to meld.
  7. Serve chilled and enjoy!

Notes

For fresh fruit, use diced fresh pineapple and mandarin oranges for a more vibrant flavor. Avoid overmixing the fruits with the whipped cream to retain light texture. Store leftovers in an airtight container in the refrigerator for 3-4 days.
