Prepare the Chocolate Potato Chips
Line a baking sheet with parchment paper. Spread out the potato chips in a single layer.
In a microwave-safe bowl, combine the chocolate chips and coconut oil (if using). Microwave in 20-second intervals, stirring between each, until fully melted and smooth.
Dip half of each potato chip into the melted chocolate and shake off the excess. Place the dipped chips on the parchment-lined baking sheet.
Refrigerate for 15-20 minutes, or until the chocolate is set.
Assemble the Dip Platter
Arrange the chocolate-dipped potato chips on a large serving tray.
Fill small serving bowls with your chosen dips (whipped cream cheese, caramel sauce, ganache, peanut butter, berry preserves, etc.).
Add fresh fruit, pretzels, marshmallows, sliced apples, or mini cookies to the platter for variety.
Serve and Enjoy
Serve immediately, or keep the platter refrigerated until ready to enjoy.
