Preparation
- Preheat your oven to 350°F (175°C) and grease your baking dish.
- Mix the butter and sugar in a bowl until light and fluffy, about 3-4 minutes.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the vanilla, baking powder, salt, lemon zest, and shredded coconut if using.
- Gradually add the flour, mixing just until combined.
- Fold in the chocolate chips or your preferred topping gently.
- Pour the mixture into your prepared baking dish and level it out with a spatula.
Baking
- Bake for 25-30 minutes or until golden brown and a toothpick comes out clean when inserted in the center.
Cooling
- Allow to cool for about 10 minutes before cutting them into squares or bars.
Notes
Store in an airtight container for up to a week or freeze for about 2 months. To reheat, microwave for 15-20 seconds.
