  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 zest of 1 lemon adds freshness
  • 1 cup shredded coconut (optional) for added texture
  • 1/2 cup chocolate chips (or your favorite topping) personalize your treats

Preparation
  1. Preheat your oven to 350°F (175°C) and grease your baking dish.
  2. Mix the butter and sugar in a bowl until light and fluffy, about 3-4 minutes.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the vanilla, baking powder, salt, lemon zest, and shredded coconut if using.
  5. Gradually add the flour, mixing just until combined.
  6. Fold in the chocolate chips or your preferred topping gently.
  7. Pour the mixture into your prepared baking dish and level it out with a spatula.
Baking
  1. Bake for 25-30 minutes or until golden brown and a toothpick comes out clean when inserted in the center.
Cooling
  1. Allow to cool for about 10 minutes before cutting them into squares or bars.

Notes

Store in an airtight container for up to a week or freeze for about 2 months. To reheat, microwave for 15-20 seconds.
