  • 1/2 cup fresh or frozen blueberries
  • 1/4 cup Greek yogurt optional, for extra creaminess
  • Additional fresh blueberries and mint leaves for garnish

  • Step 1: Combine Ingredients
  • In a mixing bowl, whisk together the chia seeds, almond milk, vanilla extract, and maple syrup (if using). Ensure the chia seeds are evenly distributed to avoid clumping.
  • Step 2: Let It Set
  • Cover the bowl and refrigerate for at least 4 hours or overnight, allowing the chia seeds to absorb the liquid and form a pudding-like consistency. Stir the mixture once or twice during the first hour to prevent clumps.
  • Step 3: Prepare the Blueberry Layer
  • Blend the fresh or frozen blueberries into a puree using a blender or food processor. If you prefer a smoother texture, strain the puree to remove the skins.
  • Step 4: Assemble the Pudding
  • Once the chia pudding has set, layer it into mason jars or serving glasses. Start with a layer of chia pudding, then add a layer of blueberry puree, and repeat.
  • If desired, add a dollop of Greek yogurt between layers for extra creaminess.
  • Step 5: Garnish and Serve
  • Top the pudding with fresh blueberries and mint leaves for a beautiful presentation.
