  • 1 cup pineapple chunks (fresh or canned)

  • 1 tablespoon ginger, grated
  • 1/4 cup sugar
  • 1/2 cup ketchup
  • 1/4 cup apple cider vinegar
  • 1 tablespoon soy sauce
  • 2 tablespoons cornstarch
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil for frying

Method
 

Preparation
  1. Season the chicken pieces with salt and pepper. Sprinkle the cornstarch over the chicken to coat it lightly.
Cooking the Chicken
  1. In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the chicken pieces and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken and set aside.
Sautéing the Vegetables
  1. In the same skillet, add more oil if needed, and sauté the chopped onions, bell peppers, garlic, and ginger until tender and fragrant, about 3-5 minutes.
Making the Sauce
  1. In a bowl, mix together the sugar, ketchup, vinegar, and soy sauce. Pour this into the skillet with the sautéed vegetables, stirring well.
Combining Chicken and Sauce
  1. Add the cooked chicken back into the skillet. Toss everything to ensure the chicken is coated in the sauce. Let it simmer for another 2-3 minutes.
Adding Pineapple
  1. Gently fold in the pineapple chunks and cook for another minute or two, just enough to warm them.
Serving
