Ingredients
  

Noodles and Proteins
  • 8 oz egg noodles or rice noodles
  • 1 lb beef strips (flank steak or sirloin)
Sauce and Seasoning
  • ¼ cup soy sauce (low-sodium recommended) Use low-sodium for less salt
  • 2 tbsp brown sugar or substitute with honey
  • 3 cloves garlic, minced
  • 1 inch piece of ginger, grated
  • 1 tbsp sesame oil
  • Salt and pepper, to taste
Vegetables
  • 1 cup bell peppers, sliced (any color)
  • ½ cup carrots, julienned
  • 2-3 green onions, chopped

Method
 

Preparation
  1. Cook the egg noodles or rice noodles according to package instructions. Drain and set aside.
  2. In a bowl, combine soy sauce, brown sugar, minced garlic, and grated ginger. Mix well. Add the beef strips and let them marinate for at least 15 minutes.
Cooking
  1. In a large skillet or wok, heat sesame oil over medium-high heat. Add the sliced bell peppers and julienned carrots. Stir-fry for about 3-5 minutes until they are tender yet crisp.
  2. Push the vegetables to the side of the skillet, then add marinated beef strips into the pan. Cook for about 5-7 minutes until browned and cooked through.
  3. Add the cooked noodles to the skillet and toss everything together. Stir-fry for an additional 2-3 minutes.
  4. Garnish with chopped green onions and serve immediately while hot.

Notes

For variations, substitute beef with chicken, tofu, or tempeh. Ensure all ingredients are prepped beforehand to streamline cooking. Avoid overcooking the beef for better tenderness. Refrigerate leftovers for up to 3 days or freeze for up to 2 months.
