Delicious Southern Squash Casserole Recipe: A Classic Comfort Food Dish

This Southern Squash Casserole is a creamy, cheesy, and comforting dish made with tender yellow squash, onions, and a buttery cracker topping. Perfect for potlucks, holiday dinners, or a cozy family meal!

  • 4 cups yellow squash sliced
  • 1 small onion finely chopped
  • 2 tablespoons butter
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika optional
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 large egg beaten
  • 1 cup crushed buttery crackers such as Ritz
  • 2 tablespoons melted butter

Method
 

  1. Step 1: Prepare the Squash
  2. Preheat your oven to 350°F (175°C).
  3. In a large skillet over medium heat, melt 2 tablespoons of butter.
  4. Add the sliced squash and chopped onion. Sauté for about 5–7 minutes until tender. Remove from heat and drain any excess liquid.
  5. Step 2: Make the Casserole Mixture
  6. In a mixing bowl, combine the cooked squash and onions with salt, pepper, garlic powder, and paprika.
  7. Stir in the shredded cheddar cheese, sour cream, mayonnaise, and beaten egg. Mix well until all ingredients are combined.
  8. Step 3: Assemble the Casserole
  9. Transfer the squash mixture into a greased 9x13-inch baking dish.
  10. In a small bowl, mix the crushed buttery crackers with melted butter. Sprinkle evenly over the top of the casserole.

  12. Place the casserole in the preheated oven and bake for 25–30 minutes or until golden brown and bubbly.
