Delicious Southern Squash Casserole Recipe: A Classic Comfort Food Dish

Ingredients
  

  • 4 cups yellow squash sliced
  • 1 small onion finely chopped
  • 2 tablespoons butter
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika optional
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 large egg beaten
  • 1 cup crushed buttery crackers such as Ritz
  • 2 tablespoons melted butter

Instructions
 

  • Step 1: Prepare the Squash
  • Preheat your oven to 350°F (175°C).
  • In a large skillet over medium heat, melt 2 tablespoons of butter.
  • Add the sliced squash and chopped onion. Sauté for about 5–7 minutes until tender. Remove from heat and drain any excess liquid.
  • Step 2: Make the Casserole Mixture
  • In a mixing bowl, combine the cooked squash and onions with salt, pepper, garlic powder, and paprika.
  • Stir in the shredded cheddar cheese, sour cream, mayonnaise, and beaten egg. Mix well until all ingredients are combined.
  • Step 3: Assemble the Casserole
  • Transfer the squash mixture into a greased 9x13-inch baking dish.
  • In a small bowl, mix the crushed buttery crackers with melted butter. Sprinkle evenly over the top of the casserole.
  • Step 4: Bake
  • Place the casserole in the preheated oven and bake for 25–30 minutes or until golden brown and bubbly.
