Ingredients
  

For the Dough
  • 1.5 cups all-purpose flour
  • 1 cup sourdough starter discard is fine
  • 0.5 cups unsalted butter, softened
  • 0.25 cups sugar
  • 0.5 teaspoon salt
  • 1 each egg (for egg wash, optional)
For the Filling
  • 0.5 cups fruit jam of your choice strawberry, raspberry, or apple are great
  • 0.25 teaspoon cinnamon optional, for added flavor
For the Topping
  • Powdered sugar for icing optional
  • Sprinkles optional

Method
 

Preparation
  1. In a mixing bowl, combine the all-purpose flour, sourdough starter, softened butter, sugar, and salt. Mix until a dough forms.
  2. Wrap the dough in plastic wrap and refrigerate for at least 20-30 minutes.
  3. Once chilled, remove the dough from the fridge and divide it into two equal pieces. On a floured surface, roll out both pieces into rectangles, about ¼ inch thick.
Filling and Sealing
  1. Cut the rolled dough into rectangles, approximately 4x6 inches. Place half of the rectangles on a baking sheet lined with parchment paper.
  2. Add a tablespoon of your favorite jam in the center of each rectangle, leaving room around the edges.
  3. Take the remaining rectangles and place them on top of the filled ones. Use a fork to crimp the edges and seal them well.
  4. If using an egg wash for a golden finish, whisk an egg and brush it on top before baking.
Baking
  1. Preheat your oven to 350°F (175°C) and bake for 18-20 minutes or until the edges are golden brown.
  2. Allow them to cool slightly before dusting with powdered sugar and adding sprinkles, if desired.

Notes

These pop tarts are best enjoyed fresh, but can be stored in an airtight container at room temperature for up to three days or frozen for future snacking. When ready to eat, reheat in a toaster oven or regular oven at 350°F for about 10 minutes.
