  • 1 cup active sourdough starter Ensure it's active and bubbly.
  • 1 cup all-purpose flour Plus extra for rolling.
  • 1/4 cup olive oil
  • 1/2 teaspoon salt Adjust to taste.
  • Optional: herbs and spices (e.g., garlic powder, rosemary, or sesame seeds) Customize to your liking.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the active sourdough starter, flour, olive oil, and salt. Mix until it forms a cohesive dough.
  3. Lightly flour your work surface and roll the dough out to about 1/8 of an inch thick.
  4. Cut the dough into squares or desired shapes.
  5. Transfer the cut crackers to a baking sheet lined with parchment paper, leaving space between them.
Baking
  1. Bake in the preheated oven for 15-20 minutes, or until golden brown.
  2. Check towards the end to prevent burning.
  3. Let them cool completely on a wire rack.

Notes

Store crackers in an airtight container at room temperature for up to a week. Reheat in the oven for a few minutes to restore crunch.
