Preparation
- Preheat the oven to 350°F (175°C).
- In a large skillet over medium heat, brown the ground beef, breaking it into small pieces until fully browned, about 5-7 minutes.
- Add in the diced onion and bell pepper. Continue to sauté until the vegetables become tender and translucent, around 3-4 minutes.
- Pour in the sloppy joe sauce and mix well. Allow the mixture to simmer for about 5 minutes, seasoning with salt and pepper to taste.
- In a large mixing bowl, combine the cooked rice with the beef mixture. Stir thoroughly until evenly mixed.
- Transfer the mixture to a greased 9×13-inch casserole dish, spreading evenly.
- Sprinkle the shredded cheese evenly on top and place in the oven.
- Bake for 25 minutes, or until the cheese is bubbly and golden brown.
- Once baked, remove from the oven and let it cool for a few minutes. Garnish with fresh parsley if desired before serving.
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days. You can also freeze it for about 2-3 months. To reheat, thaw overnight in the refrigerator and reheat in the oven at 350°F (175°C) for about 20 minutes.
