  • ¼ cup vegetable oil
  • 2 large eggs

  • 1 cup shredded cheese (cheddar or your choice)

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, whisk together the cornmeal, flour, baking powder, and salt.
  3. In another bowl, mix together the milk, vegetable oil, and eggs until fully combined.
  4. Pour the wet ingredients into the dry ingredients, mixing until just combined.
  5. Gently fold in the sweet corn and shredded cheese, along with any optional add-ins.
Baking
  1. Pour the batter into a greased baking dish or skillet.
  2. Bake for 20-25 minutes, or until the top is golden brown and a toothpick comes out clean.
  3. Allow to cool for a few minutes before slicing. Enjoy warm!

Notes

Store leftovers wrapped tightly in plastic wrap or aluminum foil in the refrigerator for up to 3 days or frozen for up to 3 months. Reheat in the oven at 350°F (175°C).
