Preparation
- Preheat your oven to 400°F (200°C).
- In a large bowl, whisk together the cornmeal, flour, baking powder, and salt.
- In another bowl, mix together the milk, vegetable oil, and eggs until fully combined.
- Pour the wet ingredients into the dry ingredients, mixing until just combined.
- Gently fold in the sweet corn and shredded cheese, along with any optional add-ins.
Baking
- Pour the batter into a greased baking dish or skillet.
- Bake for 20-25 minutes, or until the top is golden brown and a toothpick comes out clean.
- Allow to cool for a few minutes before slicing. Enjoy warm!
Notes
Store leftovers wrapped tightly in plastic wrap or aluminum foil in the refrigerator for up to 3 days or frozen for up to 3 months. Reheat in the oven at 350°F (175°C).
