Preparation
- Rinse your optional vegetables and chop them into bite-sized pieces. If using protein, ensure it’s pre-cooked and set aside.
Cooking
- In a medium saucepan, melt the butter over medium heat. Add the Rice a Roni and sauté until the rice becomes lightly golden, about 2-3 minutes.
- Carefully pour in the 2 cups of water. If you want to add a boost of flavor, this is a great time to toss in any additional seasonings.
- Bring the mixture to a boil. Once boiling, reduce the heat to low and cover. Let it simmer for about 10-12 minutes, or until the rice is tender.
- Fold in your cooked chicken or shrimp, and any vegetables you’ve added. Cover and cook for an additional 3-5 minutes until everything is heated through.
- Fluff the rice with a fork, serve in bowls, and relish the deliciousness of your homemade meal!
Notes
Substitutions: Feel free to swap proteins and vegetables! Tofu or beans can be excellent substitutes for meat. Keep an eye on the rice as it cooks; it should be fluffy and not mushy. Avoid using too much water to ensure the best texture. Leftovers can be stored in an airtight container in the refrigerator for 3-4 days or frozen for up to a month. Reheat with a splash of water.
