  • 1 cup Granulated Sugar
  • 1/2 cup Brown Sugar, packed
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Cayenne Pepper Adjust to taste
  • 1/4 teaspoon Salt
  • 1 teaspoon Vanilla Extract
  • 2 tablespoons Cornstarch For crispy coating

Method
 

Preparation
  1. Cut your fresh pineapple into bite-sized chunks and set them aside, making sure they are uniform in size for even cooking.
  2. In a mixing bowl, combine granulated sugar, brown sugar, cinnamon, cayenne pepper, salt, and cornstarch. Mix the dry ingredients until well combined.
  3. Heat oil in a deep pan or fryer over medium heat, aiming for about 350°F (175°C) for optimal frying.
Cooking
  1. Toss the pineapple chunks in the sugar mixture until thoroughly coated.
  2. Carefully place the coated pineapple chunks into the hot oil, frying in batches to avoid overcrowding. Fry until golden brown and crispy, about 3-4 minutes.
  3. Remove the fried pineapple and drain it on a paper towel-lined plate to absorb excess oil.
Finishing Touches

Notes
