  • 1 tablespoon olive oil For sautéing the vegetables
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth Use low-sodium if preferred
  • 1 cup pastina pasta Tiny pasta will cook quickly
  • 1 medium carrot, diced
  • 1 cup frozen peas Added towards the end of cooking
  • to taste Salt and pepper For seasoning the soup
  • for garnish Fresh parsley, chopped Adds color and flavor

Method
 

Preparation
  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 3-4 minutes, then stir in the minced garlic for an additional minute.
  2. Pour in the vegetable or chicken broth, and bring it to a boil.
  3. Once boiling, add the pastina and diced carrots. Cook according to package instructions, usually around 5-7 minutes until the pasta is al dente.
  4. Stir in the frozen peas and let them heat through for about 2-3 minutes.
  5. Add salt and pepper to your liking, then remove the pot from heat.
  6. Serve hot, garnished with chopped fresh parsley for that extra pop of color and flavor.

Notes

For an elevated experience, consider adding toppings like fresh herbs, lemon zest, or grated cheese. Great to pair with garlic bread or a salad for a complete meal.
