Preparation
- Bring a large pot of salted water to a boil. Add the orecchiette and cook according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the pasta and set it aside.
Cooking
- In a large skillet over medium heat, add the olive oil. Once hot, add the Halal sausage, breaking it up as it cooks. Stir occasionally until browned and cooked through, about 5-7 minutes.
- Add the minced garlic and broccoli florets to the skillet. Sauté for another 3-4 minutes until the broccoli is tender but still vibrant.
- Add the cooked orecchiette to the skillet, along with a little reserved pasta water. Stir gently to combine all the ingredients. If it seems dry, add more pasta water a little at a time until you reach your desired consistency.
- Sprinkle in salt, pepper, and red pepper flakes if using, adjusting according to your taste. Toss everything together and cook for another 1-2 minutes.
Serving
- Serve the pasta warm, topped with grated Parmesan and fresh herbs if desired. Enjoy the delightful balance of flavors and textures!
