Prepare the batter:
In a large mixing bowl, whisk together the flour, baking powder, salt, sugar, and black pepper.
In a separate bowl, combine the beaten egg, milk, and melted butter or oil. Add the wet ingredients to the dry ingredients and stir until just combined. Fold in the corn.
Heat the oil:
Heat about 1/4 inch of vegetable oil in a large skillet over medium-high heat until shimmering.
Fry the fritters:
Drop spoonfuls of the batter into the hot oil, flattening slightly with the back of the spoon. Fry for 2-3 minutes on each side, or until golden brown and crispy.
Remove the fritters with a slotted spatula and place them on a plate lined with paper towels to drain excess oil.

Serve warm with a dollop of sour cream, honey, or your favorite dipping sauce.
Tips
Use fresh, sweet corn for the best flavor. If using frozen corn, thaw and drain it well.
To add extra flavor, mix in chopped scallions, shredded cheese, or a pinch of paprika.
Keep cooked fritters warm in a 200°F oven while frying the remaining batches.
