Preparation
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, whisk together the all-purpose flour, sugar, baking powder, and salt until combined.
- In another bowl, mix the milk, vegetable oil, eggs, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined, being careful not to overmix.
- If using chocolate chips, blueberries, or nuts, gently fold them into the batter.
- Line a muffin tin with paper liners or spray with cooking oil. Fill each cavity about 2/3 full with batter.
Baking
- Place the muffin tin in the preheated oven and bake for 20 to 25 minutes, or until a toothpick inserted in the center comes out clean.
Cooling
- Allow the muffins to cool for a few minutes in the tin before transferring them to a wire rack.
- Enjoy your delicious muffins warm or at room temperature!
Notes
For healthier versions, substitute all-purpose flour with whole wheat flour or use almond milk for a dairy-free option. Store in an airtight container at room temperature for up to three days.
