Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
Wet Ingredients
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
Optional Add-ins
  • 1 cup chocolate chips or blueberries, or nuts (for better flavor)

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, whisk together the all-purpose flour, sugar, baking powder, and salt until combined.
  3. In another bowl, mix the milk, vegetable oil, eggs, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined, being careful not to overmix.
  5. If using chocolate chips, blueberries, or nuts, gently fold them into the batter.
  6. Line a muffin tin with paper liners or spray with cooking oil. Fill each cavity about 2/3 full with batter.
Baking
  1. Place the muffin tin in the preheated oven and bake for 20 to 25 minutes, or until a toothpick inserted in the center comes out clean.
Cooling
  1. Allow the muffins to cool for a few minutes in the tin before transferring them to a wire rack.
  2. Enjoy your delicious muffins warm or at room temperature!

Notes

For healthier versions, substitute all-purpose flour with whole wheat flour or use almond milk for a dairy-free option. Store in an airtight container at room temperature for up to three days.
