  • 2 cups cooked chicken, shredded or diced Can use rotisserie chicken for convenience.
  • 1 cup Swiss cheese, shredded Adds creaminess to the casserole.
  • 1 cup heavy cream Provides richness and a creamy texture.
  • 1 cup broccoli florets Can be fresh or frozen.
  • 1/2 cup onion, diced Adds flavor.
  • 3 cloves garlic, minced Enhances the flavor.
Seasoning
  • 1 teaspoon salt Adjust to taste.
  • 1/2 teaspoon black pepper Adjust to taste.
  • 1/2 teaspoon dried thyme Adds herbal flavor.
  • 1 teaspoon olive oil For sautéing the vegetables.
Topping
  • 1/2 cup grated Parmesan cheese Optional, for extra flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent (about 3-5 minutes).
  3. In a large mixing bowl, combine the shredded chicken, heavy cream, sautéed onion and garlic, broccoli florets, salt, pepper, and thyme. Mix until everything is well combined.
  4. Transfer the chicken mixture into a greased baking dish. Sprinkle the top with shredded Swiss cheese and then the optional grated Parmesan cheese.
Baking
  1. Place the casserole in the preheated oven and bake for 25-30 minutes, or until the cheese is bubbly and golden brown.
  2. Once baked, allow it to cool for a few minutes before serving.

Notes

Consider adding cooked quinoa or cauliflower rice for added nutrition. Watch the casserole near the end of the baking time to prevent the cheese from browning too much.
