Preparation
- Preheat your oven to 350°F (175°C).
- In a skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent (about 3-5 minutes).
- In a large mixing bowl, combine the shredded chicken, heavy cream, sautéed onion and garlic, broccoli florets, salt, pepper, and thyme. Mix until everything is well combined.
- Transfer the chicken mixture into a greased baking dish. Sprinkle the top with shredded Swiss cheese and then the optional grated Parmesan cheese.
Baking
- Place the casserole in the preheated oven and bake for 25-30 minutes, or until the cheese is bubbly and golden brown.
- Once baked, allow it to cool for a few minutes before serving.
Notes
Consider adding cooked quinoa or cauliflower rice for added nutrition. Watch the casserole near the end of the baking time to prevent the cheese from browning too much.
