  • 1 tablespoon sesame oil Rich in umami flavor.
  • 2 tablespoons soy sauce Ensure it's halal-certified.
  • 1 teaspoon sugar or honey Optional for sweetness.
  • 1 clove garlic, minced Adds garlic flavor.
  • 1 tablespoon toasted sesame seeds For topping.
  • a pinch salt To taste.
  • Optional: sliced green onions for garnish

Method
 

Preparation
  1. Begin by washing the fresh spinach thoroughly under cold water. Drain and pat dry with a towel.
  2. In a large pot, bring water to a boil. Once boiling, add a pinch of salt and toss in the spinach for about 30 seconds.
  3. Immediately transfer the spinach to a bowl of ice-cold water to stop the cooking process. Drain and squeeze out excess moisture.
Dressing
  1. In a small bowl, combine the sesame oil, soy sauce, sugar (or honey), minced garlic, and a pinch of salt. Whisk well until the sugar is dissolved.
Combine
  1. In a large mixing bowl, add the drained spinach and the dressing. Toss gently to avoid breaking the leaves.
Finish Up
  1. Top the seasoned spinach with toasted sesame seeds and sliced green onions if desired.
Serve
  1. Transfer the salad to a serving dish and enjoy it fresh!

Notes

If you have leftovers, store in an airtight container in the refrigerator for up to 2 days. To maintain crunchiness, avoid adding the dressing until ready to serve. You can enjoy it warm by reheating the blanching water.
