- Begin by washing the fresh spinach thoroughly under cold water. Drain and pat dry with a towel.
- In a large pot, bring water to a boil. Once boiling, add a pinch of salt and toss in the spinach for about 30 seconds.
- Immediately transfer the spinach to a bowl of ice-cold water to stop the cooking process. Drain and squeeze out excess moisture.
Dressing
- In a small bowl, combine the sesame oil, soy sauce, sugar (or honey), minced garlic, and a pinch of salt. Whisk well until the sugar is dissolved.
Combine
- In a large mixing bowl, add the drained spinach and the dressing. Toss gently to avoid breaking the leaves.
Finish Up
- Top the seasoned spinach with toasted sesame seeds and sliced green onions if desired.
Serve
- Transfer the salad to a serving dish and enjoy it fresh!
Notes
If you have leftovers, store in an airtight container in the refrigerator for up to 2 days. To maintain crunchiness, avoid adding the dressing until ready to serve. You can enjoy it warm by reheating the blanching water.
