Method
 

Preparation
  1. Begin by washing all your fresh produce.
  2. Dice the cucumber, halve the cherry tomatoes, chop the bell pepper and red onion, and finely slice the black olives. Make sure everything is cut into similar bite-sized pieces.
Mixing
  1. In a large mixing bowl, combine the diced cucumber, cherry tomatoes, chopped bell pepper, red onion, baby spinach, and olives. Toss them gently to mix.
Dressing
  1. Drizzle the Italian dressing over the mixed vegetables.
  2. If you’d like to make your own dressing, simply whisk together olive oil, vinegar, Italian herbs, and a pinch of salt.
Seasoning and Serving
  1. Sprinkle a bit of salt and pepper to taste. Gently toss all the ingredients together until the salad is evenly coated with the dressing.
  2. Transfer the salad to a serving bowl, top with crumbled feta cheese and a sprinkle of fresh parsley if desired. Serve immediately or let it chill in the fridge.
