Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Wash and chop your vegetables into uniform pieces for even cooking.
  3. In a large bowl, combine olive oil, minced garlic, dried thyme, dried rosemary, salt, and pepper. Stir well to create a marinade.
  4. Add the chopped vegetables to the bowl and toss until evenly coated.
  5. Spread the marinated veggies on a large baking sheet lined with parchment paper, ensuring they're in a single layer.
Cooking
  1. Place the baking sheet in the oven and roast for 20-25 minutes, stirring halfway through.
  2. Once golden brown and tender, remove from oven and garnish with fresh parsley if desired. Serve hot.

Notes
