  1. Cook the Pasta: Begin by boiling water in a large pot. Add salt and then your choice of pasta. Cook according to package instructions until al dente. Drain and set aside.
  2. Caramelize the Onions: In a large skillet, melt the butter over medium heat. Add the sliced onions and sugar, stirring occasionally. Cook for about 15-20 minutes until the onions are golden brown and caramelized.
  3. Create the Sauce: Add the flour to the onions and stir to incorporate. Gradually pour in the vegetable broth and heavy cream, stirring until combined. Allow the mixture to simmer for a few minutes, adding salt and pepper to taste.
  4. Combine: Add the cooked pasta to the skillet, tossing to coat with the sauce. Mix in half of the shredded cheese, allowing it to melt into the pasta.
  5. Serve: Spoon the pasta into bowls, topping each with remaining cheese and garnishing with fresh herbs.

Notes

Caramelization is key—take your time when caramelizing the onions. Feel free to customize by adding sautéed mushrooms or spinach. Using a blend of cheeses can enhance the flavor.
