Preparation
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large mixing bowl, beat the softened butter and granulated sugar together using an electric mixer until light and fluffy, about 3-4 minutes.
- Beat in the egg along with the vanilla extract and almond extract.
Mixing
- Gradually add the dry ingredient mixture to the wet mixture, beating until just combined. Do not overmix.
Chilling and Baking
- Cover the dough with plastic wrap and refrigerate for about 30 minutes.
- Scoop tablespoon-sized portions of dough onto a baking sheet lined with parchment paper, leaving space for spreading.
- Bake in the preheated oven for about 8-10 minutes or until the edges are lightly golden.
- Remove from oven and let cookies cool on the baking sheet for a few minutes before transferring to a wire rack.
Decorating
- Once cool, decorate the cookies with colorful icing.
