  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt

  • 1 cup unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract (alcohol-free)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare your baking sheets by lining them with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large mixing bowl, cream the softened butter with granulated sugar until light and fluffy, about 3-4 minutes.
  4. Beat in the egg and vanilla extract to the butter-sugar mixture, then slowly add in the dry ingredients, stirring gently until fully combined.
  5. Roll small balls of dough (about 1 inch) and place them on the prepared baking sheets, leaving space for spreading.
Baking
  1. Bake for 10-12 minutes, or until the edges begin to lightly brown.
  2. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.
Decorating
  1. Once cool, prepare your icing by mixing powdered sugar with a little water (or milk alternative) and food coloring. Decorate with sprinkles as desired.

Store cookies in an airtight container for up to one week or freeze for up to three months. Thaw at room temperature or warm in the oven to refresh their texture.
