Ingredients
  

For the chicken
  • 2 large boneless chicken breasts, cut into strips
  • 1 cup all-purpose flour
  • 1 cup breadcrumbs, preferably panko for extra crunch
  • 2 large eggs, lightly beaten
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • to taste salt and pepper
  • ¼ cup olive oil for cooking
For the salad
  • 4 cups mixed salad greens (spinach, arugula, or lettuce)
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, sliced
  • ½ medium red onion, thinly sliced
For the dressing
  • ¼ cup olive oil for dressing
  • juice of 1 lemon
  • to taste salt and pepper for dressing

Preparation
  1. Season the chicken strips with salt, pepper, garlic powder, onion powder, and paprika.
Breading Process
  1. Set up a breading station by placing the flour, beaten eggs, and breadcrumbs in separate shallow bowls.
  2. Dredge each chicken strip in flour, dip in the egg, and finally coat in breadcrumbs, making sure to cover thoroughly.
Cooking the Chicken
  1. Heat olive oil in a frying pan over medium heat. Once hot, add the breaded chicken strips, cooking for 4-5 minutes per side, or until both sides are golden brown and cooked through.
