  • 1 jalapeño pepper, seeded and finely chopped
  • 1/4 cup chopped onion (sweet or yellow)
  • 1 clove garlic, minced
  • 1/2 teaspoon ground cumin

  • Fresh cilantro for garnish (optional)
  • Tortilla chips or veggie sticks for dipping

  1. Gather all your ingredients to make the process smoother.
Cooking
  1. In a medium saucepan over medium heat, add a splash of oil and sauté the chopped onion until translucent (about 3-4 minutes).
  2. Add the minced garlic and diced jalapeño; sauté for another minute until fragrant.
  3. Reduce heat to low and add cottage cheese, shredded cheddar cheese, diced tomatoes, and ground cumin. Stir until well combined.
  4. Continue stirring until the cheese has melted and achieves a creamy consistency (about 5-7 minutes).
  5. Taste and season with salt, adding more spices or toppings if desired.
  6. Transfer to a serving bowl, garnish with fresh cilantro if using, and serve warm with tortilla chips or veggie sticks.

Notes

You can substitute different types of cheese like Monterey Jack or pepper jack for an extra kick. Ensure not to overheat the dip after melting the cheese to keep it smooth. Leftovers can be stored in an airtight container for up to three days, or frozen for a month (noting texture changes).
