  • 1 cup cottage cheese
  • 1/2 cup buffalo sauce Adjust based on preferred spice level
  • 1 cup shredded cheddar cheese Reserve some for topping later
  • 1/4 cup green onions, chopped Plus extra for garnish
  • 1 cup cooked, shredded chicken
  • to taste Salt and pepper Buffalo sauce will add spice

  • Tortilla chips or celery sticks For serving

Preparation
  1. In a medium-sized bowl, combine the cottage cheese and buffalo sauce. Stir until the cottage cheese is fully coated and the mixture is smooth.
  2. Fold in the cooked, shredded chicken, ensuring it is evenly distributed throughout the mixture.
  3. Stir in the shredded cheddar cheese, reserving some for topping later, and mix until incorporated.
  4. Add salt and pepper to taste, remembering that the buffalo sauce will add some natural spice!
Baking
  1. Transfer the mixture to an oven-safe dish and top with the reserved cheddar cheese.
  2. Bake at 350°F for about 15-20 minutes or until the cheese is bubbly and golden.
Serving
  1. Remove from the oven and let it cool slightly. Garnish with extra green onions before serving with tortilla chips or celery sticks.

Notes

Experiment with spiciness by adjusting the buffalo sauce. Can be made ahead of time and stored in the refrigerator for up to 3 days.
