Ingredients

Main Ingredients
  • 500 g boneless chicken thighs or breasts, cut into bite-sized pieces
  • 2 tablespoons black pepper, freshly ground
  • 2 tablespoons soy sauce (ensure it’s halal)
  • 1 tablespoon ginger, minced
  • 3 cloves garlic, minced
  • 1 tablespoon vegetable oil (like canola or sunflower)
  • 1 tablespoon cornstarch
  • 1 tablespoon sesame oil
  • 1 tablespoon chopped green onions for garnish Optional: Fresh cilantro for garnish

Method

Preparation
  1. In a bowl, mix the diced chicken pieces with soy sauce and cornstarch. Let it marinate for about 10 minutes while you prep the rest of your ingredients.
Making the Sauce
  1. Combine the black pepper, minced ginger, and minced garlic in a small bowl. This mixture is going to add depth to your dish.
Cooking
  1. In a large pan or wok, heat the vegetable oil over medium-high heat.
  2. Add the marinated chicken to the pan in a single layer. Let it sear without stirring for 4-5 minutes or until golden brown on one side. Stir occasionally until fully cooked.
  3. Once the chicken is nicely browned, reduce the heat and add the black pepper mixture. Stir well to coat all pieces evenly.
  4. Drizzle in the sesame oil for an extra layer of flavor. Cook for an additional 2-3 minutes until everything is hot and fragrant.
Serving
  1. Garnish with chopped green onions and cilantro if desired. Enjoy over steamed rice or noodles!

Notes

Substitutions: If you prefer chicken breast over thighs or vice versa, feel free to swap! Timing: Keep an eye on the chicken; overcooking can lead to dryness. Avoiding Common Mistakes: Don’t skip marinating the chicken! It enhances the flavor and keeps the meat tender. Also, be mindful of the amount of black pepper; it can intensify quickly!
