Ingredients
  

For the crust
  • 1.5 cups 1 ½ cups graham cracker crumbs
  • 0.5 cups ½ cup unsalted butter, melted
  • 0.25 cups ¼ cup granulated sugar
For the filling
  • 2 packages 2 (8-ounce) packages cream cheese, softened
  • 1 cups 1 cup granulated sugar
  • 1 teaspoon 1 teaspoon vanilla extract
  • 3 large 3 large eggs
For the topping
  • 2 cups 2 cups assorted berries (strawberries, blueberries, raspberries)
  • 2 tablespoons 2 tablespoons granulated sugar (optional, for sweetening the berries)
  • Fresh mint leaves (optional, for garnish)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the graham cracker crumbs, melted butter, and sugar until fully mixed.
  3. Press this mixture firmly into the bottom of a 9-inch springform pan. Bake for about 10 minutes, then set aside to cool.
Making the filling
  1. In a large mixing bowl, beat the softened cream cheese until smooth.
  2. Gradually add in the sugar and vanilla extract, mixing well until combined.
  3. Add the eggs, one at a time, ensuring everything is well blended and creamy.
Baking
  1. Pour the cream cheese mixture over the cooled crust, smoothing the top with a spatula.
  2. Bake in the preheated oven for 50-55 minutes or until the filling is set and has a slight jiggle in the center.
Cooling and Serving
  1. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for about an hour.
  2. Refrigerate for at least 4 hours or preferably overnight for the best results.
  3. Just before serving, mix the berries in a small bowl, adding sugar if desired to enhance their sweetness.
  4. Remove the cheesecake from the springform pan and top with the fresh berry mixture. Garnish with mint leaves if desired, slice up, and enjoy!

Notes

To enhance the cheesecake texture, ensure all ingredients are at room temperature before mixing. Consider using different kinds of crusts, like an Oreo crust for a chocolate twist. Bake until just set to avoid cracks, and cool gradually to prevent sudden temperature changes.
