Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the graham cracker crumbs, melted butter, and sugar until fully mixed.
- Press this mixture firmly into the bottom of a 9-inch springform pan. Bake for about 10 minutes, then set aside to cool.
Making the filling
- In a large mixing bowl, beat the softened cream cheese until smooth.
- Gradually add in the sugar and vanilla extract, mixing well until combined.
- Add the eggs, one at a time, ensuring everything is well blended and creamy.
Baking
- Pour the cream cheese mixture over the cooled crust, smoothing the top with a spatula.
- Bake in the preheated oven for 50-55 minutes or until the filling is set and has a slight jiggle in the center.
Cooling and Serving
- Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for about an hour.
- Refrigerate for at least 4 hours or preferably overnight for the best results.
- Just before serving, mix the berries in a small bowl, adding sugar if desired to enhance their sweetness.
- Remove the cheesecake from the springform pan and top with the fresh berry mixture. Garnish with mint leaves if desired, slice up, and enjoy!
