Ingredients
  

For the Fritters
  • 2 medium apples, peeled, cored, and diced (Granny Smith recommended)
  • 1 cup all-purpose flour
  • ¼ cup granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon or more to taste
  • ¼ teaspoon salt
  • ½ cup milk (dairy or non-dairy alternatives)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Optional: powdered sugar or icing for glazing

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Peel, core, and dice your apples into small chunks.
Mix Dry Ingredients
  1. In a mixing bowl, combine the flour, sugar, baking powder, cinnamon, and salt. Whisk until evenly mixed.
Combine Wet Ingredients
  1. In another bowl, whisk together the milk, eggs, and vanilla extract until smooth.

  1. Pour the wet ingredients into the dry mixture and stir gently until just combined. Fold in the diced apples until they are well-coated.
Bake
  1. Using a spoon or ice cream scoop, drop spoonfuls of the batter onto a greased baking sheet, leaving space between each fritter.
  2. Bake for 15-20 minutes or until golden brown.
Add Toppings
  1. Once out of the oven and cooled slightly, drizzle with powdered sugar glaze or dust with powdered sugar before serving.

Notes

Store leftover fritters in an airtight container in the refrigerator for up to 3 days. Reheat in a preheated oven at 350°F (175°C) for 5-10 minutes. Freezing is also an option for up to a month, wrapped in plastic wrap.
