  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon minced ginger
  • 2 tablespoons soy sauce (or Tamari for gluten-free)
  • 1 tablespoon hoisin sauce
  • 1 teaspoon sesame oil
  • 1 cup diced bell peppers (any color)
  • 1/2 cup shredded carrots
  • Fresh cilantro, for garnish
  • Butter or romaine lettuce leaves, washed and separated

Method
 

Preparation
  1. In a large skillet, heat a drizzle of oil over medium heat. Add the chopped onion, cooking until translucent—just 3-4 minutes.
  2. Stir in the minced garlic and ginger, cooking for an additional minute until fragrant.
  3. Add the ground beef to the skillet, breaking it apart with a spoon. Cook until browned and fully cooked through, about 5-7 minutes.
  4. Drain any excess fat from the skillet if necessary. Add soy sauce, hoisin sauce, and sesame oil. Stir well to combine and cook for another 2 minutes.
  5. Fold in the diced bell peppers and shredded carrots, cooking for an additional 2-3 minutes until the veggies are tender but still crisp.
  6. Remove from heat and set the mixture aside.
  7. To serve, scoop a generous portion of the beef mixture into a lettuce leaf, top with cilantro, and enjoy!

Notes

You can swap out ground beef for turkey, chicken, or tofu for a vegetarian option. For heat, consider adding red pepper flakes or a drizzle of chili oil to the beef mixture. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet over medium heat before serving.
