Ingredients
  

Wet Ingredients
  • 1 cup pitted dates, chopped Chopped for easy incorporation
  • 1 cup orange juice Freshly squeezed is preferred
  • 1/3 cup vegetable oil (or melted coconut oil) Can substitute with melted coconut oil
  • 2 large eggs At room temperature for best results
  • 1 tbsp zest of 1 orange Enhances flavor
Dry Ingredients
  • 1/2 cup almond flour Can substitute with additional all-purpose flour
  • 1 cup all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup sugar (or honey) Adjust sweetness to taste
Topping
  • 1/2 cup chopped almonds For a crunchy texture

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan or line it with parchment paper.
  2. Combine the chopped dates and orange juice in a mixing bowl and let soak for about 10 minutes.
  3. In another bowl, whisk together the almond flour, all-purpose flour, baking soda, baking powder, and salt.
  4. In a large mixing bowl, beat together sugar and oil until well combined, then add eggs and orange zest, mixing until incorporated.
  5. Stir in the soaked date mixture, followed by the dry ingredients, and gently fold in the chopped almonds.
Baking
  1. Pour the batter into the prepared loaf pan, spreading it evenly.
  2. Bake in the preheated oven for 45-55 minutes or until a toothpick inserted into the center comes out clean.
Cool and Serve
  1. Allow the loaf to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely. Slice and enjoy!

Notes

Store in an airtight container at room temperature for up to 4 days, or freeze for up to 3 months. Reheat in the oven or toaster for best texture.
