Preparation
- Preheat your oven to 350°F (175°C) and grease a loaf pan or line it with parchment paper.
- Combine the chopped dates and orange juice in a mixing bowl and let soak for about 10 minutes.
- In another bowl, whisk together the almond flour, all-purpose flour, baking soda, baking powder, and salt.
- In a large mixing bowl, beat together sugar and oil until well combined, then add eggs and orange zest, mixing until incorporated.
- Stir in the soaked date mixture, followed by the dry ingredients, and gently fold in the chopped almonds.
Baking
- Pour the batter into the prepared loaf pan, spreading it evenly.
- Bake in the preheated oven for 45-55 minutes or until a toothpick inserted into the center comes out clean.
Cool and Serve
- Allow the loaf to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely. Slice and enjoy!
